Marlene writes, “My Mum is a whiz with fritters. She can create a meal for six using only one sausage by making it into fritters. You can also make corn, tomato, potato, even mixed vegetable fritters. They go a long way, are easy to make and inexpensive.”
A Frittata is a yummy quick and easy meal served with salad or greens, & crusty bread rolls – kept in the freezer for when needed. You do need a cast iron pan or similar which can go from stovetop to under the grill.
For extra flavour fry some chopped bacon then gently stir – fry all the Vegies you can find in the fridge – starting with onion and garlic.
Add finely sliced carrots then the quicker cooking vegies.
I have used up small amounts of sliced cauliflower, broccoli, brussel sprouts, leeks capsicum, carrot, pumpkin, kumara, spring onions. Lastly add tomatoes if using. Season well.
Then beat 4-6 eggs depending on size of pan with a dessert spoon of milk per egg & Season well.
Pour egg mix over Vegies, sprinkle on grated cheese and continue to cook over low heat until bottom of frittata is set.
Finally put under grill for 10 mins until top is firm and cheese has browned.
Stand for a few minutes before cutting into generous wedges.
