Mountains of mandarins

Dee from Whangarei writes, “Some friends of ours have hundreds of mandarin trees that are absolutely loaded with fruit. We have given away fruit to virtually everyone we know, and we still have bag loads. So I am sending out an SOS to the oily rag community to ask for suggestions on how to make the most of the free fruit.”

Frugal lady from Whakatane replies: “If you don’t have a juicer, you can use a blender to get the juice from your mandarins: cut the mandarin in half BEFORE PEELING, take out the seeds, then peel and place in blender. You might need to add a bit of water to get it going. When you’re finished blending, use a strainer and then you can freeze your mandarin juice. Delicious!”

Re the mandarins, try food bank or local schools. Both will take them. – Andrea, Nelson.

Stew peeled mandarins and serve with a light chocolate sauce or custard. This is a quick & delicious simple winter dessert! Tramore, Whangarei.
