Silver beet and young tums?

Young Mum has a conundrum, one many families will relate to.

“We have silver beat growing all year round. It’s easy to grow, and free which is even better, but unfortunately it’s not a favourite with our young children. Can anyone help me with ways to introduce silver beat into our meals in a way that makes it more palatable to young tums?”

  • Cook the silver beet & mash with mashed spud & a little butter. Sieve to make a sloppy mix. Do not cook the stalks with the leaf as they take a lot longer. Cook separately & add a cheese sauce(packet), or even onions (chopped fine & par cooked in the m/wave) or mushroom soup (packet). This then becomes another vege for the meal. Giant Fordhook is stronger than the smaller varieties, (try Rainbow Beet) but the stalks make a bigger contribution to the plate.
