Dehydrating Greens

Josephine from Otorohanga writes,

“Dehydrating Greens. I removed the centre stalks of red cabbage HUGE TOUGH outer leaves which had NOT been sprayed.I dried them for hours in the oven on a low heat (expensive?). Next I did kale on a cake rack in the electric fry pan squashed under the high lid on the lowest setting for about 4 hours turning it until there was no steam on the glass lid. Greens shrink amazingly. I then whizzed them (nice and soft)and put in a screw-top jar. I sprinkle 1 tsp per person on each dinner plate, or soup serving. Yummy and healthy. Cheapest dehydrating can be done outside in a bug proof cage (takes 4 days in sunshine).”
